Quite excited about the idea of an entire book about eggs. But also, eggs are mostly a solitary pleasure for me. Can I take it from the sixth chapter that the recipes in chapters 1-5 can be scaled up or down for 1-2 people?

Most of the recipes in 1-5 are for 1-2 people. I agree that it’s a solitary / small number of people pleasure, and suggest in the book that you shouldn’t cook eggs for more than 3 other people at the same time, otherwise it’s rubbish for the cook / like a restaurant / moderately stressy. Chapter 6 offers a few ways to break the rule

Love this idea and good shout on the supermarket pitta! You actually inspired me to make eggs poached in Kimchi for lunch yday. Kept things simple and didn’t even bring out the rice cakes but it was a delicious alternative to Shakshuka or these eggs. Will make again!
